Vegan Banana Cookies

Global pandemic. Translation: bake banana bread ?

It’s April 2020, we are 3 weeks into a nationwide lockdown. When panic buying started over a month ago the country stocked up on the essentials. Toilet rolls and bananas.

A week into lockdown Instagram erupted with banana bread. We saw you, stockpilers. Everyone needed a place for their browning nanas . But, always one to love bucking the trend, yours truly went and made some vegan cookies. I have to add, as an avid banana consumer, these were not of the stockpiled variety.

With banana stocks replenished, the world can relax. However, I’d still give this super simple, vegan recipe a go!

Ingredients:

2 bananas
2 cups gluten free oats
Plamil Foods so free chocolate chunks

Method:

  1. Preheat the oven to 180.
  2. Mash the bananas with the oats
  3. That’s literally it.
  4. Now add anything you like till your heart’s content. I made 1.5x the mix and split in half, making one batch stuffed full with so free chocolate chunks in dark, milk and white – all vegan and allergy friendly. The other I made with chopped dates and vanilla extract for my mum because she’s both coeliac and can’t eat chocolate. But feel free to add any dried fruit and nut etc.
  5. Mould the mix into balls, press down with a fork and bake for about 5-6 mins. These barely need the oven, so don’t do a me and wander off. Make sure that timer’s set! From start to finish these will barely take you 10 mins – so perfect if you fancy a quick treat with a coffee.


For a different texture, you can also blitz the oats into an oat flour. This will obviously make the texture a lot smoother and makes the mix a little more malleable.

I was kindly gifted the Plamil foods chocolate to try and thought this recipe was perfect. I was really pleasantly surprised at how good the chocolate was! Especially the white, considering it’s all vegan! I would probably avoid baking with the white choc in future though as it crystallised a little in these and they weren’t in the oven for very long. But all in all, really impressed! Especially as @plamilfoods are an ethical and sustainable company!
